Pilaf (Moroccan Rice)

Made with Chilzo’s spicy Red Harissa, enjoy this flavorful Moroccan Pilaf

Serves: 4

Prep Time: 10 mins

Cooking time: 20 mins


  • 2 cups Basmati rice
  • 2 tbsp. Red Harissa paste
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 1/8 teaspoon ground cloves (or 2-3 whole cloves)
  • 1/4 teaspoon cardamom (or 5-6 cardamom pods)
  • 1 stick cinnamon
  • 2 bay leaves
  • Salt and pepper to taste
  • 3 cups vegetable stock or water


1. Heat olive oil in a large pot

2. Add onions and sauté for 2-3 mins

3. Then, add rice, bay leaf, cardamom, cinnamon and sauté, for 2-3 mins

4. Pour in the stock (or water) along with Harissa paste and salt, then cover the pot until it starts to boil

5. Simmer for 5-10 minutes till the rice is cooked

6. Garnish with coriander and serve
