Pizza: A Food Fit for All
Flatbreads served with toppings were enjoyed by the Egyptians, Greeks, and Romans! However, the pizza we know today, with the cheese and sauce, originated on the Italian western coast, in the city of Naples.
During the 18th- 19th centuries, Naples was booming. The city housed a populace that needed quick and affordable food. Takeaway, if you will. Pizza essentially became a food for the working class and was widely available with toppings like tomatoes, cheese, garlic, anchovies, and oil - reflecting the readily accessible ingredients of that time. It was a fast, affordable, and popular street food, often consumed for breakfast, lunch, or dinner. So the next time somebody advises you against having pizza for breakfast give them a little history lesson!

Legend has it that in 1889, the King and Queen of Italy, bored with their usual high-class dishes, decided to try a pizza from a local pizzeria called Pizzeria Brandi (which still exists, btw). Their pizza was adorned with white cheese, red tomatoes, and fresh basil. The dish was later named the Margherita pizza, after the queen herself!
Pizza travelled across the seas when Italian migrants brought their favourite dish to the Americas. Lombardi’s in Manhattan holds the title of the earliest pizza place in the US and it is open to this day. Amusing as it sounds, when Lombardi’s changed locations, they took their well-seasoned oven with them!
As Italian-Americans settled across the country, pizza's popularity grew, leading to its spread across the country. Different regions in the US developed their unique styles of pizza, such as Chicago and New York, each with distinct characteristics. Later on, as it seems to happen a lot in terms of cultural and culinary exchange, the pizza spread across the world as a quintessential American dish!
