From Taishan to… Everywhere!

Chow mein is a beloved Chinese dish that traces its roots back to the Taishan region of Guangdong province in Southern China. The name "chow mein" comes from the Taishanese dialect, where "chow" means stir-fried and "mein" means noodles. This delightful concoction of stir-fried noodles, veggies, meat, and sometimes seafood has been hogging everyone’s love and attention for quite some time!

Over centuries, variations of chǎomiàn have flourished across China, showcasing diverse frying techniques and a plethora of interesting toppings. From bustling roadside stalls to elegant Chinese restaurants, chow mein has become a staple in the culinary landscape, embraced by the Chinese diaspora and food enthusiasts alike.

The journey of chow mein doesn't end there! Thanks to Chinese immigrants, this gem found its way to distant shores like India (actually quite a lot of South Asia) America, and the UK.

But let's not forget the humble beginnings of chow mein – dressed with a medley of kitchen sink veggies like cabbage, onions, mushrooms, and celery. 炒面 (Chǎo miàn) isn't just a dish; it's a cultural icon with a history as rich and flavourful as its taste!

Onto the Recipe!

These are the ingredients you need to make the tastiest Chow Mein Noodles ever!

  • Chilzo’s Chow Mein noodles
  • 200g chicken breast, thinly sliced
  • 150g bok choy, chopped
  • 100g carrots, julienned
  • 100g bell peppers, thinly sliced
  • 2 cloves garlic, minced
  • 1 small onion, thinly sliced
  • 2 tbsp soy sauce
  • 1 tbsp Chilzo’s Oyster Sauce
  • 1 tsp sesame oil
  • 1 tsp sugar
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • Spring onions, chopped for garnish

Follow these simple steps to make authentic Chow Mein Noodles:

  1. Get your noodle game on and boil Chilzo’s Chow mein noodles until they're al dente. Once they're done, drain and let 'em take a chill pill on the side.
  2. Give your chicken slices a nice soy sauce bath. Let them soak up all that flavour for about 10 minutes while you crank up your favourite cooking tunes.
  3. Heat up your trusty pan or wok and get ready to unleash some serious mastery! I’m just kidding, it’s not all that intense. Just add a splash of vegetable oil and toss in the marinated chicken slices. Let them sizzle away until they're golden and utterly irresistible.
  4. Next, we sauté the garlic and onion party. Follow that up by adding in your julienned carrots and bell peppers. Stir-fry 'em up until they're tender-crisp.
  5. Time to leaf it to the bok choy! Add it to the mix and try not to get sad watching it wilt down. There, there.
  6. Bring back the chicken, along with those cooked noodles and turn it into a reunion you won't want to miss!
  7. Lest we forget, gotta prepare the sauce! Mix soy sauce, oyster sauce, sesame oil, and a dash of sugar in a bowl. Pour it over your noodles and let the flavours mingle.
  8. Stir everything together until the noodles are coated in that irresistible sauce.
  9. Taste test time! Season with salt and pepper to your liking. Sprinkle on some chopped spring onions for the finishing touch (Green onions are kind of like glitter. They make everything better!)

And there you have it – a bowlful of Chow mein happiness ready to be devoured!
